Stephen Thacker – Byers Street Bistro
About the Chef:
Stephen Thacker, Executive Chef at Byers Street Bistro was born and raised in Staunton, Virginia. Being a local has helped influence his appreciation for everything the valley has to offer. At a young age Stephen took interest in the restaurant business, applying himself to every aspect he could learn. This knowledge fostered a passion for cooking of which Stephen has carried over into his professional life.
A Graduate of James Madison University, Stephen studied and earned a degree in political science and criminal justice. Although he had several opportunities after graduating college, Stephen felt the draw back to the culinary arts. Joining his previous employers he took up residence as Chef de Cuisine at Bismark Beef Company. Although the owners decided to pursue other avenues of business, Stephen continued to follow his passion, accepting the position as Executive Chef of Staunton Country Club. During his tenure Stephen was able to refine his skills and focus his attention to regional flavor profiles, aesthetics, and developed an interest in Southwest cuisine.
Since his arrival at Byers Street Bistro, Stephen has put special emphasis on improving some classic favorites, along with creating some original menu items that showcase his culinary talent and passion for modern fusion cuisine. He looks forward to working closely with our neighbors, the farmers market, to compliment his dishes with local flavor. Offering a variety of nightly specials, along with his new menu, Chef Stephen is committed to ensuring every dining experience with Byers Street Bistro will be a great one.

The Bistro Welcomes Drayton "Dray" Turner
MAY 2009 - Byers Street Bistro is proud to welcome Drayton Turner, of Charlottesville, to its culinary team. “Dray” attended Johnson and Wales University, and worked at several of the finest restaurants in South Carolina, including Long Island Café and Indigo House, on Kiawah Island. During this time he was exposed to the low country scratch cooking that he enjoys so much today.
After graduating from culinary school, Dray returned to Charlottesville where he served as Sous Chef for the Blue Light Grill, Orzo Kitchen & Wine Bar, and Keswick Hall. Drayton plans on using his diverse culinary background to help create an American Low-Country Spring menu while offering exceptional cultural influenced features each evening.
“Dray” has taken on the Sous Chef position and will be assisting Executive Chef Hans Hoffman. Both chefs enjoy preparing American Regional Cuisine and using fresh ingredients.

MARCH 2009 - In 1999 owner, Jeff Ramsey, opened the doors to Byers Street Bistro and gave the locals a place to call their own. His mission was to give the community a unique and comfortable restaurant that fused a relaxed family atmosphere with an entertaining social spot. Over the years, The Bistro has continued to evolve, but those involved haven’t lost sight of it’s original objective. The Bistro remains the same great informal restaurant that serves moderately priced down-to-earth food in a modest setting.

“Now that the Bistro is turning ten we felt it was time to freshen things up a bit and have a little fun in the process”, said Giovanni Cannata, who has served at General Manager of the restaurant since it’s opening. “Gio”, as many call him, has worked hard to insure quality and consistency while keeping things fresh and innovative.
The customers agree; they have a good thing going. “The personable staff and laid back atmosphere make The Bistro the best place in town. I am always greeted with great conversation and everyone really does know my name.” Says regular Brad Bays. Since the beginning, the Bistro’s friendly staff has set them apart as most customers are greeted by name when they walk through the door. First time guests quickly feel right-at-home as they experience relaxed service from their professional and knowledgeable staff.
Supporting the Arts
To compliment the recent induction of a new logo and improved menu Byers Street Bistro is getting involved in the support of local artists. They have commissioned local photographer, Nathan Beck to display his work through the month of March and will continue to feature the works of other artists. In addition, the Bistro continues to support local musicians by featuring live music Thursday thru Saturday nights in their bar area.
Banquet Facilities
The Bistro also provides guests with an on-premise banquet facility where a menu and all details are tailored to fit individual needs. Their doors are open Monday thru Friday from 11:00 am to Midnight and Saturday and Sunday from 4:00 pm to Midnight.
